Meringue Wreath

Ingredients for 20 servings

150g egg whites at room temperature

300g caster sugar

Red and pink colouring powder

Step 1

Pour the egg whites into the bowl and start to whisk. Slowly start adding the sugar 1 tbsp at a time while whisking continuously. Whisk the egg whites for 15 minutes in total until glossy and stiff. Divide the meringue into three small bowls; leave one as it is, and put the red and pink colouring in the others.

Step 2

Place the meringue mix into a piping bag with a star nozzle. Line a baking tray with baking paper and create your garlands, squeezing the meringue into your favourite shape and varying between circles, stars and hearts. If needed, draw outlines on the baking paper first, then lay it upside down on the baking tray.

Step 3

Meanwhile, preheat the oven to 95°C on the NEFF CircoTherm®. Bake your meringue garlands for 3 hours until golden and dried out. Once baked, leave it aside to cool completely.

Step 4

Once cooled, place the pretty meringue garlands on serving plates to decorate with the ribbons of your choice! Enjoy!
