Cooks : 170°CCircoTherm for 20 minutes 200C CircoRoast with low added steam for 20-25 minutes Prep: 10 minutes.
- 6 medium floury potatoes, peeled and chopped into large chunks
- 2 tbsp duck fat, oil or lard
- Salt and Pepper
Step 1
Preheat the oven to 170°C Circotherm.
Step 2
Place the potatoes in a pan of salted cold water and bring to the boil. Simmer for 12-14 minutes, until the potatoes are tender.
Step 3
While the potatoes are simmering, place the duck fat, lard or oil in a roasting pan and put into the preheated oven.
Step 4
Drain the potatoes in a colander and give them a good shake to rough up the edges.
Step 5
Toss the cooked potatoes in the melted duck fat, lard or oil, and put into the oven to cook for 20 minutes, turning the potatoes once every ten minutes.
Step 6
Change the oven setting to 200°C CircoRoast with low added steam and cook for 20-25 minutes (increasing the temperature will help the potatoes to crisp up). Turn the potatoes every ten minutes.
Step 7
Season with salt and black pepper.
Step 8
Serve immediately to enjoy at their crispy best.
